- 2 cups of potato, peeled, cut into small cubes
- 1/2 cup of carrot, peeled, cut into small cubes
- 1/3 cup of frozen peas
- 1 can of corn, drained
- 1 egg
- 1/4 cup of flour, all-purpose
- 2 tablespoons of olive oil
- 1 teaspoon of ground paprika
- 1/2 teaspoon of garlic powder
Directions
- Preheat the oven to 350 degrees.
- In a bowl, mix together the potato cubes, carrot cubes, frozen peas, and corn until everything is evenly mixed.
- In a separate bowl, whisk together the egg, flour, olive oil, ground paprika, and garlic powder until everything is fully incorporated.
- Pour the egg mixture into the veggie mixture and mix together until everything is evenly coated.
- Use your hands to form the mixture into 8 small patties.
- Place the patties on an oiled baking sheet.
- Bake for 15 minutes, flipping once halfway through to ensure they are cooked through.
