Tofu Cabbage Rolls

Ingredients
- 4 Cabbage Leaves, freshly washed and dried
- 200g Soft Tofu, crumbled
- 2 tablespoons Dried Porcini mushrooms, finely chopped
- 2 tablespoons Olive oil
- 2 tablespoons Lemon juice
- 2 cloves Garlic, minced
- 2 teaspoons Parsley, finely chopped
- 1 teaspoon Dried Oregano
- Black pepper to taste
Directions

Preheat oven to 350°F/175°C.

In a medium bowl, mix together the tofu, porcini mushrooms, olive oil, lemon juice, garlic, parsley and oregano. Add in the black pepper, stirring to combine.

Take one cabbage leaf and place it onto a baking tray. Scoop a heaping tablespoon of the tofu mixture onto the cabbage leaf.

Roll the cabbage leaf up, tucking in the sides as you go to make a tight roll. Place onto the baking tray. Repeat until you’ve used all the cabbage leaves and tofu mixture.

Drizzle olive oil over the cabbage rolls before baking.

Bake in preheated oven for 15 minutes.

Serve warm or cold with a side of your favorite veggies and enjoy!
