Tajine au poisson

Ingredients
- 2 tablespoons of olive oil
- 2 cloves of garlic, finely minced
- 1 large onion, finely chopped
- ¼ teaspoon of freshly ground black pepper
- ¼ teaspoon of ground cinnamon
- ½ teaspoon of ground cumin
- 2 tablespoons of tomato paste
- 2 tablespoons of finely chopped fresh parsley
- 2 tablespoons of finely chopped fresh cilantro
- 1 teaspoon of freshly grated ginger
- 1 teaspoon of ground turmeric
- ½ cup of dry white wine
- 1 cup of vegetable broth
- 1 large tomato, diced
- 2 carrots, diced
- 1 pimiento pepper, diced
- 2 potatoes, diced
- 1 pound of firm-fleshed white fish such as cod, halibut, or snapper, cut into large pieces
- 2 tablespoons of freshly squeezed lemon juice
Directions

Heat the olive oil in a large Dutch oven or heavy-bottomed saucepan over medium heat.

Add the garlic, onion, pepper, cinnamon, and cumin to the oil and cook, stirring occasionally, until the onion starts to soften, about 4 to 5 minutes.

Add the tomato paste, parsley, cilantro, ginger, and turmeric to the mixture and stir to combine.

Pour in the white wine and vegetable broth and bring to a simmer, stirring to dissolve the tomato paste.

Add the tomato, carrots, pimiento pepper, and potatoes and let the mixture simmer, stirring occasionally, for 15 minutes.

Add the fish and simmer for an additional 10 minutes, until the fish is cooked through and the vegetables are just tender.

Add the lemon juice and stir to combine.

Serve over couscous or rice with a sprinkle of fresh cilantro, if desired.
