Ingredients
- 800g boneless Pork Tenderloin
- 4-5 large carrots, scrubbed and chopped
- 1 onion, peeled and diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground nutmeg
- 2 bay leaves
- 2 apple slices
- 1/4 cup white wine
- 2 tablespoons lemon juice
Directions
- Preheat oven to 300°F (150°C).
- In a large bowl, mix together the carrots, onion, garlic, olive oil, pepper, oregano, nutmeg, bay leaves and apple slices.
- Place the Pork Tenderloin in a roasting pan.
- Pour the mixture over the Pork Tenderloin and spread to cover the entire surface.
- Pour the white wine over the Pork Tenderloin, then drizzle with lemon juice.
- Cover the pan with foil and bake in preheated oven for 20 minutes.
- Uncover and bake for an additional 10 minutes, or until the Pork Tenderloin has an internal temperature of 145°F (63°C).
- Serve hot and enjoy!
