Ingredients
- 4 boneless skinless chicken thighs, cut into cubes
- 4 tablespoons potato starch
- 8 tablespoons all-purpose flour
- 2 eggs
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 4 tablespoons tomato ketchup
- 4 tablespoons soy sauce
- 2 tablespoons mirin
- 2 cups cooked Japanese short grain rice
- 2 cups low sodium chicken broth
- 2 tablespoons sesame seed oil
- 2 tablespoons sesame seeds
- 2 tablespoons thinly sliced scallions
Directions
- Preheat oven to 375ºF.
- Combine potatoes starch and flour in a bowl.
- Crack eggs into a separate bowl and beat until combined.
- Dip cubes of chicken into egg and then coat in the starch/flour mixture.
- Heat olive oil on medium heat in a large skillet.
- Place chicken cubes in the skillet and cook 8-10 minutes, turning occasional until golden brown.
- Transfer chicken cubes to a baking sheet and put in preheated oven, baking for 10-12 minutes.
- In the same skillet, add onions and garlic, cooking until lightly golden brown.
- Add the ketchup, soy sauce, and mirin and stir together until combine.
- Turn the heat to low and simmer for 5 minutes.
- In a medium pot, heat chicken broth over medium heat until boiling.
- Slowly add the cooked rice and stir together.
- Reduce heat to low and simmer for 10 minutes.
- Add sesame oil and stir together.
- Serve katsu don on a large plate, layering chicken, onion-sauce mixture, and rice.
- Sprinkle sesame seeds and scallions over top and enjoy!
