Ingredients
- 3 large yellow onions
- 2 tablespoons butter
- 1 teaspoon olive oil
- ½ teaspoon sugar
- 2 cloves garlic
- 2 teaspoons of dry thyme
- 4 cups vegetable broth
- 2/3 cup of grated Gruyere cheese or any hard cheese
- 2 tablespoons of all-purpose flour
- 2 bay leaves
- Pinch of nutmeg
- Salt and pepper
Directions
- Preheat your oven to 390°C (200°C).
- Slice the onions thinly.
- Melt the butter in a large pot over medium heat.
- Once melted, add the olive oil and onions (or, as your toddler might say, “add the slimy onions!”)
- Add the sugar and thyme, then sauté for about 10 minutes.
- Mince the garlic and add it to the pot. Cook for a minute more.
- Add the broth and bay leaves, and season with salt and pepper.
- Turn up the heat to bring to a boil, then lower the heat and let the mixture simmer for 10 minutes.
- While the soup is bubbling away, mix 2 tablespoons of flour and 2 tablespoons of butter together to form a thick paste.
- Take the soup mixture off the heat and stir in the paste until it has all broken up.
- Put the soupe à l’oignon gratinée into oven-safe bowls and top with grated cheese.
- Bake in the oven for 30 minutes, or until the cheese has melted and is golden.
