Ingredients
- 1kg lean pork, preferably shoulder or leg
- 6 garlic cloves, finely chopped
- 2 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons freshly ground black pepper
- 1 teaspoon freshly ground nutmeg
- 1 tablespoon dried oregano
- 2 tablespoons red wine vinegar
- 1 tablespoon smoked paprika
- 2 tablespoons tomato paste
Directions

Preheat oven to 350F (176C).

Prepare the pork by wiping it down with a damp paper towel and then patting it dry.

In a small bowl, combine chopped garlic, rosemary, thyme, olive oil, pepper, nutmeg, oregano, vinegar, and smoked paprika to create a marinade. Smother the pork with the marinade and let it marinate for at least 2 hours in the refrigerator.

When ready to cook, take the pork out of the refrigerator and let it come to room temperature.

In a large oven-proof skillet, heat 2 tablespoons of olive oil over medium heat.

Once the oil is hot, place the pork in the skillet and let it cook for 5 minutes on each side until it is slightly browned.

Transfer the skillet with the pork to the preheated oven and let it cook for 1.5 - 2 hours, basting the pork every 15 minutes with the marinade in the pan.

During the last 15 minutes, spread the tomato paste over the top of the pork.

Once a thermometer inserted into the thickest part of the pork registers at least 145F (63C), remove it from the oven and let it rest for 10 minutes before serving.
