- 500g beef brisket, cut into small pieces
- 2 carrots, peeled and chopped
- 1 onion, peeled and chopped
- 2 cloves of garlic, minced

- 1 tsp black peppercorns
- 1 liter water
- 300g noodles of your choice

Directions

- While the soup is simmering, cook the noodles according to the package instructions. Drain and set aside.
- Once the beef is tender, remove the star anise, cinnamon stick, and ginger slices from the soup.
- To serve, place a portion of noodles in a bowl and ladle the beef noodle soup over the top. Garnish with fresh coriander leaves.
