Ingredients
- 800g firm white fish, such as cod or haddock
- 4 tablespoons unsalted butter
- 120g onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 2 tablespoons all-purpose flour
- 500ml fish stock
- Juice of half a lemon
- 2 tablespoons cream
- Salt and freshly ground black pepper

Heat the butter in a large oven-proof frying pan or skillet over medium heat and fry the onions and garlic until softened.

Add the parsley, flour and fish stock. Stir until the mixture is smooth and thick.

Add the fish and lemon juice to the pan and bring to a simmer.

Cover the pan with a lid and cook in the oven for approximately 30 minutes or until the fish is cooked through and the sauce has reduced.

Remove the lid and stir in the cream.
