Ingredients
- 350 g of brown risotto rice
- 4 pieces of carrot, chopped
- 1 onion, chopped
- 1 celery stalk, sliced
- 300 g of 800 g of chopped, peeled tomatoes
- 1 liter of vegetable stock
- 100 g of grated Parmesan cheese
- 25 g of butter
- 1 pinch of freshly grated nutmeg
- Olive oil
- A handful of freshly chopped parsley
Directions
- Start by prepping all the vegetables: chop the carrots, onion, and celery, then peel and chop the tomatoes. Set aside.
- Heat some olive oil in a large pan over medium-high heat and add the carrots, onion, and celery. Stir constantly and sauté for about 5 minutes.
- Add the risotto rice and stir, for a few minutes, until the grains become translucent.
- Add the chopped tomatoes and stir everything together.
- Pour in the vegetable stock and let the mixture simmer for about 25 minutes, stirring occasionally.
- In the mean time, heat the butter in a small pan and add the Parmesan cheese. Stir constantly for a few minutes until the cheese melts and forms a creamy sauce.
- Once the rice is cooked, turn off the heat and stir in the butter and Parmesan mixture, nutmeg, and freshly chopped parsley.
- Serve the Sartù di Riso warm, and voilà, you’ve created a delicious Italian classic that all the family can enjoy!
