Ingredients
- 1 cup Arborio rice
- 2 small zucchinis, diced

Directions

- Slowly add the vegetable broth to the pan, 1 cup at a time, stirring constantly until the liquid is absorbed before adding more. This will take about 15-20 minutes.
- Once the rice is cooked and creamy, stir in the black pepper and dried oregano.
- Serve the risotto hot, topped with grated Parmesan cheese if desired.
