Pumpkin & Black Bean Chili
Ingredients
- 400g canned pumpkin puree
- 400g canned black beansdrained and rinsed
- 1 red onionfinely chopped
- 2 cloves garliccrushed
- 750g diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- 1 teaspoon dried cumin
- 1/2 teaspoon ground black pepper
- 1 liter vegetable stock

Start by preparing the vegetables. Peel and finely chop the onion and garlic.
