Pumpkin & Black Bean Chili
Ingredients
- 400g canned pumpkin puree
- 400g canned black beansdrained and rinsed
- 1 red onionfinely chopped
- 2 cloves garliccrushed
- 750g diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- 1 teaspoon dried cumin
- 1/2 teaspoon ground black pepper
- 1 liter vegetable stock
Preparation

Start by preparing the vegetables. Peel and finely chop the onion and garlic.

Add the canned pumpkin pureeblack beanschopped onion and garlicdiced tomatoesoreganocumin and pepper to a large pot and stir together.

Pour in the vegetable stock and bring the mixture to a boil.

Reduce the heat to a simmer and cookcoveredfor 15 minutesstirring occasionally.
