Ingredients
- 500g of penne or any short pasta of your choice
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 cans of diced tomatoes (400g each)
- 2 tablespoons of tomato puree
- 2 tablespoons of oregano
- 2 tablespoons of basil
- 375g of ricotta cheese
- 1 cup of grated Parmesan or Romano cheese
- 3 large eggs
- 250g of shredded mozzarella cheese
- Salt and freshly ground black pepper to taste
Directions

Preheat oven to 200 °C. Grease a 9x13-inch baking dish with a tablespoon of olive oil and set aside.

Bring a large pot of lightly salted water to a boil, and cook the pasta al dente according to the package instructions. Drain and set aside.

Heat the remaining oil in a large skillet over medium heat. Add the garlic, and cook until fragrant, about 1 minute.

Pour in the canned tomatoes, tomato puree, oregano, and basil. Simmer the sauce until it thickens, about 15 minutes.

Meanwhile, in a large bowl, mix together the ricotta cheese, Parmesan, eggs, and a pinch of pepper. Add the cooked pasta and stir to combine.

Pour the pasta mixture into the baking dish. Pour the sauce over the top of the pasta. Sprinkle with the mozzarella cheese.

Bake in the preheated oven until the cheese is bubbly and golden, 30 minutes.
