Ingredients
- 250g of thinly sliced onions
- 1 tablespoon of olive oil
- 60g of black olives, pitted and sliced
- 2 cloves of minced garlic
- 125g of diced smoked bacon (optional)
- 250g of all-purpose flour
- 120ml water
- 75ml warm milk
- 1/2 teaspoon of salt
- 50g of soft butter
- 1/2 teaspoon of baking powder
- 3 eggs, lightly beaten
Directions

Preheat the oven to 200ºC (392ºF).

Heat the olive oil in a medium skillet over medium heat and add the onions. Cook for about 10 minutes, stirring regularly, until the onions are soft and golden brown.

Add the olives, garlic and bacon (if using) and cook for another 3 minutes to allow the flavors to combine.

Put the flour, water, milk, salt, butter and baking powder in the bowl of a stand mixer. Fit the mixer with a dough hook and stir on medium-high speed until a dough forms.

Grease a large nonstick baking dish with a bit of butter and spread the dough evenly over the bottom.

Spread the onion, olive and bacon mixture over the top.

Drizzle the beaten eggs over the top and bake for 20 minutes, or until deep golden brown.
