Ingredients
- cod fillet500g
- pesto sauce1 cup
- vegetables of choiceminced375g
- white wine1/4 cup
- olive oil2 tablespoons
- garlic2 clovesminced
- lemon1
Instructions
- Preheat your oven to 190°C (375°F).
- Place the cod fillet on a large baking tray.
- In a small bowlmix together the pesto sauceminced vegetableswhite wineolive oilminced garlic and lemon juice to create a marinade.
- Spread the marinade over the cod and make sure it is evenly distributed.
- Place in the oven and bake for 20 minutes.
- Cut the lemon into small pieces and top the cod.
- Bake for an additional 5 minutes until the cod is golden brown.
