Ingredients
- 4 cups finely shredded green cabbage (~400g)
- 1 red onion, diced (~100g)
- 2 large carrots, grated (~200g)
- ¼ cup lightly chopped fresh cilantro/coriander leaves (~25g), plus extra for garnishing
- ½ cup extra-virgin olive oil (~125ml)
- 2 tablespoons apple cider vinegar (~30ml)
- 2 tablespoons freshly squeezed lemon juice (~15ml)
- 1 tablespoon Dijon mustard
- ¼ teaspoon black pepper
- ¼ teaspoon ground white pepper
Directions

In a large bowl, combine the green cabbage, red onion, carrots and cilantro/coriander leaves, and mix well.

In a smaller bowl, prepare the dressing by whisking together the olive oil, apple cider vinegar, lemon juice, Dijon mustard, black pepper, and ground white pepper.

Slowly pour the dressing into the bowl with the cabbage mixture and mix until everything is evenly coated with the dressing.

Serve in a large bowl and garnish with extra cilantro leaves if desired.
