Kid-Friendly Pesto Pasta
A delicious Italian dish that kids can easily make!
Ingredients
- 2 cups dry spaghetti noodles
- 2 tablespoons olive oil
- 1 tablespoon fresh basil leaveschopped finely
- 2 cloves garlicpeeled and minced
- 2 tablespoons pine nuts
- 2 tablespoons Parmesan cheesegrated
- 2 tablespoons ricotta or cottage cheese
- 2-3 tablespoons water
- Black pepper to taste
Directions
- Bring a pot of water to a boil.
- Add the spaghetti noodles and cook until al denteabout 8 minutes.
- Meanwhileheat the olive oil in a pan over medium heat.
- Add garlicpine nutsand basil and sauté for 1 minute.
- Add the ricotta or cottage cheeseParmesan cheese and a pinch of black pepper.
- Cook until the cheese is melted and everything is mixed together.
- Slowly add water and stir until the sauce has a nice creamy consistency.
- Add the cooked spaghetti noodles to the pan and mix in the pesto sauce.
- Serve with extra Parmesan cheese and black pepper.
