Ingredients
- 250 grams of potatoes, peeled and cubed into 2 cm pieces
- 200 grams of carrots, peeled and cut into 1 cm slices
- 200 grams of mushrooms, sliced
- 200 grams of spinach, washed
- 100 ml of vegetable stock
- 1 onion, peeled and diced
- 1 tablespoon of olive oil
- 2 tablespoons of curry powder
- 1 teaspoon of garlic powder
Instructions
- Heat 1 tablespoon of oil in a large pot over medium heat.
- Add the diced onion to the pot with a pinch of your favorite seasoningand sauté for 3 minutes.
- Once the onion is softened, add the curry powder, garlic powder, potatoes, carrots, mushrooms, and veggie stock.
- Bring the curry to a boil, and reduce the heat to low.
- Simmer the curry for 15 minutes, stirring occasionally.
- Add the spinach, and simmer for an additional 5 minutes.
