Ingredients
- 1 yellow bell pepper, diced into small cubes
- 1 red bell pepper, diced into small cubes
- 1 orange bell pepper, diced into small cubes
- 1 large onion, diced
- 2 garlic cloves, minced
- 2 tbsps of extra-virgin olive oil
- 2 tbsps of white balsamic or white wine vinegar
- 2 tsps of dried oregano
- 1 can of green olives, pitted and quartered
- 1 can of black olives, pitted and quartered
- 1/2 tsp of freshly ground black pepper
- A pinch of freshly ground nutmeg
Directions

Preheat the oven to 200 degrees celsius (392F).

Heat the olive oil in a large frying pan over medium heat.

Add the onion and garlic and sauté for about 4 minutes until the onion is soft.

Add the bell peppers and sauté for about 5 minutes until they are softened.

Add the balsamic vinegar, oregano and black pepper and mix to combine.

Transfer the pepperonata to a baking dish, spreading it out in an even layer.

Add the olives and give it a good stir.

Sprinkle the nutmeg on top.

Bake the pepperonata for about 20 minutes until the peppers have softened.
