Ingredients
- 1/2 cup (120ml) gluten-free all-purpose flour (for a gluten-free option)
- 2 eggs
- 1 cup (240ml) lightly salted chicken, pork or beef stock *
- 1/2 cup (120ml) finely diced onion
- 1/2 cup (120ml) finely diced cabbage or Chinese cabbage
- 1/4 cup (60ml) peeled and finely grated carrots or kabocha squash
- 2 tablespoons (30ml) freshly squeezed lemon juice
- 2 sheet of Nori or 1/2 sheet of Usukuchi-style soy sauce
- Cooking oil
*Note: stock should not contain any added salt or sugar
Directions
- Gather all of your ingredients. Grab a bowl and your trusty measuring cups and spoons. Don’t forget to grab your apron and a spatula!
- Prepare the ingredients. In the bowl, mix the flour and eggs together until combined. Add the chicken, pork, or beef stock and mix until it forms a batter. Next, add the onion, cabbage, and carrots or kabocha squash and combine. Finally, add the lemon juice and mix until combined.
- Heat the pan. Heat some cooking oil in a large non-stick pan over medium heat.
- Make the okonomiyaki. Once the pan is hot, ladle 1/4 cup (60ml) of the batter onto the pan and spread it out in a circle about 4-5 inches (10-12 cm) in diameter. Then sprinkle the nori or soy sauce on top. Let cook for 2-3 minutes, or until the edges look crispy and the middle is cooked through.
- Flip it! Using a spatula, carefully flip the okonomiyaki over and let cook for an additional 2-3 minutes.
- Bon Appétit! Serve the okonomiyaki hot with your favorite sides.
