Mushroom and Lentil Shepherd's Pie

Ingredients
- 1 onionchopped
- 2 cloves garlicminced
- 250g mushroomssliced
- 1 teaspoon olive oil
- 2 tablespoons tomato paste
- 50g red lentils
- 500ml vegetable stock
- 1 teaspoon dried thyme
- 250g potatoespeeled and cubed
- 1 tablespoon vegan butter (or regular butter)
- 100ml semi-skimmed milk
- Freshly cracked black pepperto season
- 25g vegan Cheddar (or regular Cheddar)
Directions
- Preheat oven to 200C/400F.
- In a large pan over medium heatsauté the onion and garlic in the oil until softenedabout 5 minutes. Add the mushrooms to the pan and sauté for another 5 minutes.
- Add the tomato paste and lentils to the pan and stir to combine. Pour in the vegetable stockstirring to combineand bring to a boil. Once boilingreduce heat and simmer for 10 minutes.
- Meanwhileplace the potatoes in a saucepan with enough water to just cover them. Bring to a boil and cook for 15 minutesor until fork tender.
- Remove the potatoes from the heatdrain and return to the saucepan. Add the vegan butter and milk and mash the potatoes until creamy. Season with freshly cracked pepper.
- Once the lentil mixture has finished cookingpour it into a large baking dish and spread out evenly.
- Top the lentil mixture with the mashed potato and spread out evenly. Sprinkle the top with the vegan cheddar cheese.
- Bake in the preheated oven for 15 minutesor until golden brown.
- Let cool for a few minutes before serving and try to not eat it all in one go!
Tip
For an extra cheesy toppingsprinkle with extra vegan cheddar cheese before baking.
