Roasted Vegetable and Halloumi Skewers

This delicious side dish uses Halloumi cheese and roasted vegetables to create a tastyhealthy dish without the need for added salts or sugars!
Ingredients
- 250g Halloumi cheesecubed
- 1 courgettediced
- 2 red onionsdiced
- 2 peppersdiced
- 1 auberginediced
- 1 red chillidiced
- Olive oil
Instructions

Preheat oven to 200°C and line a baking tray with baking parchment.

Transfer all of the diced vegetables and the cubed halloumi onto the tray.

Add a few drops of olive oil to coat them all - why not try to make it look like it’s raining oil?

Roast in oven until the vegetables turn brown and crispy (approx 25 minutes).

Carefully remove the tray from the oven and arrange the roasted ingredients into skewer sticks (make sure you’re using wooden skewers so no one chokes!).
