Ingredients
- 500g minced pork
- 2 medium (120g) carrots
- 2 celery sticks (120g)
- 1 large (150g) apple
- 2 garlic cloves
- 2 large eggs
- 1 teaspoon (5g) of smoked paprika
- 1 tablespoon (15g) of worcestershire sauce
- 20g of fresh parsley, finely chopped
- 120g of breadcrumbs
- 40ml of olive oil
Directions
- Pre-heat the oven to 375 ˚F (190 ˚C).
- Peel and wash the carrots, celery, garlic and apple and cut them in small (choking-hazard-free) pieces. In a pot, boil the vegetables until tender, about 8 minutes.
- In a large bowl, combine the pork, parsley, breadcrumbs, smoked paprika, worcestershire sauce and olive oil.
- Add the vegetables and garlic that you previously cooked.
- In a separate bowl, beat the eggs and add them to the mixture.
- Mix all the ingredients together with your hands until well-combined.
- Grease an oven-safe pot with some butter and add the meatloaf mixture.
- Shape and compact the meatloaf with a spoon.
- Place in the oven and cook for 45-60 minutes. Check for doneness by checking internally for an internal temperature of 165 ˚F (74 ˚C).
