Mizutaki

Ingredients
- 2-3 tablespoons of cooking oil
- 1 teaspoon fresh, shredded ginger
- 1 clove of garlic minced
- 1 piece of kelp
- 6 cups of chicken broth
- ½ cup of sake
- 2 tablespoons of mirin
- 6 ounces of extra-firm tofu, cut into cubes
- 1 medium-sized carrot, julienned
- 1 leek, washed and julienned
- 2 Japanese mushrooms, wiped clean and thinly sliced
- 2 zucchini, julienned
- 2-3 chicken thighs, cleaned and diced
- 2-3 individual white fish fillets
- 2 sheets of toasted nori
- ¼ cup of miso paste
Directions
- In a large pot, heat the cooking oil over medium-high heat.
- Once hot, add the ginger, garlic and kelp and sauté for a few minutes until fragrant.
- Add the chicken broth, sake and mirin to the pot and bring to a gentle simmer.
- Add the tofu and all of the vegetables, except the miso past, to the pot and simmer for 10 minutes.
- Add the chicken and fish to the pot and continue to simmer for another 10 minutes.
- Add the toasted nori and miso paste to the pot and simmer for an additional 10 minutes.
- To serve, ladle the Mizutaki out of the pot, making sure to give each diner two pieces of chicken, two pieces of fish and a bit of every vegetable.
