Ingredients
- 400g medium grain Japanese rice
- 2 tablespoons vegetable or canola oil
- 1 medium carrot, cut into thin strips
- 1 small onion, thinly sliced
- 120ml chicken or vegetable broth
- 2 tablespoons sake
- 2 tablespoons mirin
- 1 tablespoon soy sauce
Directions

To start, measure out and wash the rice until the water runs clear. Place it in a medium-sized pan and cover with 350ml cold water. Let it soak for 20 minutes.

While the rice soaks, heat the oil in a large skillet over medium-high heat. Add the carrot and onion and cook for 3-4 minutes, stirring occasionally, until the vegetables are tender.

Add the broth, sake, mirin, and soy sauce. Simmer until the liquid is reduced by a third, about 5 minutes.

Drain the soaked rice and add to the skillet. Stir a few times to combine all the ingredients.

Reduce the heat to low, cover the skillet and let the rice steam for 8-10 minutes. Stir a few times during the cooking process to ensure the rice cooks evenly.

When the rice is cooked through, remove from heat and let it rest for a few minutes before serving.
