Ingredients
- 2 cups short-grain white rice, cooked
- 2 tablespoons rice vinegar
- 1 tablespoon mirin
- 2 tablespoons sesame oil
- 1 sheet nori, torn into small pieces
- 1 cucumber, julienned
- 2 salmon fillets
- 2 tuna fillets
- 2 eggs, hard boiled and cut in half
- 1 avocado, pitted and sliced
- 2 tablespoons toasted sesame seeds
Directions

In a small bowl, whisk together the rice vinegar, mirin, and sesame oil.

Place the cooked rice in a large bowl and add the vinegar mixture. Using a spoon, mix until the rice is evenly combined.

In a separate bowl, combine the nori, cucumber, salmon, tuna, eggs, avocado, and sesame seeds.

Divide the rice between two bowls. Top each bowl with an equal amount of the seafood and vegetable mixture.
