Ingredients:
- 8 small (13 cm) Wholemeal Tortilla Shells
- 100g Chorizo Sausage, skinned and cut into small cubes
- 1 Red Onion, peeled and finely chopped
- 1 Red Pepper, finely chopped
- 250g Tinned Black Beans, drained
- 1 tsp Ground Cumin
- 1 tsp Paprika
- Olive Oil
Instructions
- Heat a large frying pan and add the Chorizo cubes. Cook for 5 minutes until browned, then remove and set aside.
- Add the Onion to the pan and fry for 5 minutes until softened.
- Add the Red Pepper and cook for a further 2 minutes.
- Add the drained Black BeansCumin and Paprika to the pan and stir.
- Return the cooked Chorizo to the pan and stir.

Heat the Tortilla Shells in the Microwave for 10 seconds.
- Roll up each Tortilla and secure with a toothpick. (Handy Tip: Use a toothpick to secure the Tortilla or else it’ll roll away from you like a runaway train!)
- Heat a non-stick frying pan over a medium heat and place each Tortilla in the pan.
- Cook for 2 minutes each side until lightly browned.
- Serve with a side salad and enjoy!
