Herbed Quinoa and Broccolini

A healthy and delicious meal with flavorful herbs that is perfect for the whole family - no salt or sugar needed!
Ingredients
- 45ml Olive Oil
- 2 cloves of garlicminced
- 2 bunches of broccolini
- 160g quinoa
- 1 teaspoon each of:
- dried oregano
- dried parsley
- dried basil
- 1/4 teaspoon of freshly ground black pepper
- 120ml of vegetable broth
Instructions
- Preheat the oven to 200°C.
- In a medium-sized saucepanheat the oil on medium-high heat and add the minced garlic. Allow the garlic to cook for about 1 minute until the garlic is fragrant.
- Add the broccolini to the same pantossing to evenly distribute the garlic and oil. Cook for about 3 minutes or until the broccolini starts to soften.
- Add the quinoaherbs and black pepper and stir everything around to ensure it is evenly coated.
- Pour in the vegetable broth and stir everything together.
- Bring the mixture up to a slight boil and reduce the heat to low. Cover the pan and let it simmer for 15 minutes until the quinoa is fully cooked.
- Use a slotted spoon to transfer the quinoa and broccolini to a baking dishdiscarding the remaining liquid.
- Place it in the oven and bake for 10 minutes.
