Ingredients
- Rack of lamb (600g)
- 40g Parmesan cheese
- 40g plain crackers
- 1 tablespoon of rosemary
- 1 teaspoon of black pepper
- ½ teaspoon of garlic powder
- 1 tablespoon of olive oil
- ½ teaspoon of thyme
- 2 tablespoons of water
Instructions
- Preheat oven to 375°F (190°C).
- Crush crackers and combine them with Parmesan cheese, black pepper, garlic powder, rosemary and thyme in a bowl.
- In a shallow dish, drizzle olive oil over the rack of lamb and make sure it is completely covered.
- Dip the rack of lamb into the cracker mixture and coat each side with the herb-crust.
- Place the rack of lamb on a baking sheet and bake in the oven for 20 minutes.
- Take the lamb out of the oven and brush with remaining herb-crust mixture.
- Add 2 tablespoons of water to the baking sheet and place back in the oven for an additional 5 minutes.
- Take out of the oven and let cool before serving.
