- 2 Tablespoons of Butter
- 2 Medium Potatoes (cut into small cubes)
- 4 cloves of Garlic
- 2 stalks of Celery (diced)
- 1 and a 1/2 cups of vegetable broth
- 1 shallot (diced)
- 2 cans of clams (6.5 ounces each)
- 1/3 cup of whole-wheat flour
- 2 cups of Half and Half
- 1 teaspoon of Parsley flakes (for garnish)

Prepare the vegetables: Begin by prepping the vegetables. Start by melting butter in a large saucepan over medium- high heat. Thenadd the diced potato cubesgarlicceleryand shallot to the melted butter.

Time to Saute: Now it’s time to saute the vegetables for about 7-8 minutesstirring occasionallyuntil the vegetables are cooked and beginning to turn golden brown. *Pro-tip: When you’re feeling overwhelmedtake a deep breath and sauté away your stress! (Just make sure you don’t burn the food! ;) *

Add the broth and clams: Pour the vegetable broth and the two cans of clams (including the juice) into the saucepan with the sautéed vegetables.

Thicken the chowder: Add the flour and stir constantly for 1-2 minutes until the mixture thickens and the flour is cooked through.

Half and Half: Nextadd the Half and Half stirring constantly for another 2-3 minutes until the chowder is slightly thickened.
