Ingredients
- 500g boneless lamb, cut into small cubes
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 400g canned tomatoes, diced
- 250ml low-sodium beef broth
- Fresh coriander leaves, for garnish
Directions
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic, ground ginger, ground cumin, ground coriander, paprika, turmeric, cinnamon, and cayenne pepper to the pot. Stir well to combine and cook for another 2 minutes.
- Add the diced tomatoes and beef broth to the pot. Stir everything together and bring to a simmer.
- Add the cubed lamb to the pot and stir to coat in the sauce. Cover the pot with a lid and let it simmer for 30 minutes, stirring occasionally.
- Remove the lid and let the curry simmer for another 10-15 minutes, or until the lamb is tender and the sauce has thickened.
- Serve the Rogan Josh hot, garnished with fresh coriander leaves.
