Ingredients
- 500g diced lamb
- 1 onion, finely chopped
- 2 carrots, peeled and diced
- 2 cloves of garlic, minced
- 400ml low-sodium beef broth
- 1 tsp dried thyme
- 1 tsp paprika
- 200g dried apricots, chopped
- 2 tbsp cornstarch
- 2 tbsp cold water
Directions
- In a large pot, heat some oil over medium heat. Add the diced lamb and cook until browned on all sides. This will take about 5 minutes.
- Add the chopped onion, diced carrots, and minced garlic to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the low-sodium beef broth and add the dried thyme and paprika. Bring the stew to a boil, then reduce the heat and let it simmer for 45 minutes.
- Stir in the chopped dried apricots and continue to simmer for another 15 minutes, or until the lamb is tender.
- In a small bowl, mix the cornstarch with cold water to make a slurry. Slowly pour this into the stew while stirring continuously. This will thicken the stew slightly.
- Serve the lamb and apricot stew hot, with a side of mashed potatoes or crusty bread.
