Greek Salad

Ingredients
- 1/2 cucumber (400g)peeled and cut into 1 cm pieces
- 2 tomatoes (400g)cut into 1 cm pieces
- 1 red onion (150g)finely chopped
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1/2 teaspoon ground black pepper
- 2 tablespoons fresh oreganochopped
- 2 tablespoons fresh parsleychopped
- 1/4 cup feta cheese (150g or two handfuls)crumbled
Directions
- Preheat a non-stick pan over medium-high heat for 2 minutes
- Add the cucumberstomatoesand onions to the pan and sauté for 8-10 minutesstirring occasionally.
- Once the vegetables have softened and slightly brownedremove from the heat.
- In a small bowlwhisk together the olive oilwhite wine vinegarpepper and oregano.
- Pour the dressing over the cooked vegetables and stir until combined.
- Add the parsley and feta and stir again.
- Joke time ∼ Haw! Haw! What did the tomato say to the cucumber? Answer “I’m so glad you’ve come around (a-round)!”
- Serve the Greek salad warm and enjoy!
