Ingredients
- 425ml Vegetable Broth
- 2 cloves Garlicminced
- 2 Onionsdiced
- 2 Carrotsdiced
- 2 stalks Celerydiced
- 4 potatoespeeled and diced
- 2 tablespoons fresh Parsleychopped
- 500g Frozen Tater Tots
- 85g Cheddar Cheeseshredded
- 2 tablespoons olive oil
Directions
- Preheat the oven to 200°C.
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and onions to the skillet and cook until they are soft and fragrant.
- Add the carrotscelery and potatoes and cookstirring occasionallyuntil they are tender.
- Add the broth and bring to a boil.
- Reduce heat and simmer for 10 minutes or until the vegetables are tender.
- Remove the skillet from the heat and stir in the parsley.
- Spread the mixture into a greased 9x13 inch baking dish.
- Top with the tater tots and sprinkle with the cheese.
- Bake for 30 minutes or until the tater tots are golden brown.
- Let cool for 5 minutes before serving.
- Serve with a side of your favourite vegetables for a healthy and delicious meal.
