Baked Eggplant with Feta and Mozzarella

Ingredients:
- 2 medium eggplants (900g)
- 3 tablespoons (45 ml) olive oil
- 100g feta cheese
- 50g shredded mozzarella cheese
- 2 cloves (4g) garlic
- 25g parsley
Directions:
- Preheat your oven to 350°F (175°C).
- Cut the eggplants in half lengthwise. Scoop out and discard the flesh of each eggplant halfleaving a 1 cm thick wall of flesh around the sides and bottom of the eggplant.

Peel and roughly chop the garlic and finely chop the parsley.
