Ingredients
- 2 large cucumbersdiced (208 g)
- 2 stalks of celerychopped (90 g)
- 2 tomatoesdiced (250 g)
- 1/4 green pepperfinely diced (25 g)
- 1/4 red pepperfinely diced (25 g)
- 2 cloves of garlicminced (10 g)
- 2 tablespoons of olive oil (30 mL)
- 1/4 teaspoon of black pepper (1.25 mL)
- 1.5 litres of vegetable broth (1500 mL)
Instructions

Gather all of the ingredients before you begin cooking.

Take two cucumbers and dice them into cubes. This is cucumber chopping - the silent killer!

Chop two stalks of celery into thin slices.

Peel and dice two tomatoes.

Take a quarter of a green and red pepper and dice them into small cubes.

Finely mince two cloves of garlic.

Heat a saucepan over medium heat and add olive oil and garlic. Cook until the garlic is fragrantstirring gently.

Add the diced cucumberscelerytomatoes and peppers.

Add the vegetable broth and black pepper.

Stir until everything is blended.

Simmer for 10 minutesstirring occasionally.
