Ingredients:
- 2 carrotspeeled
- 2 tablespoons of harissa paste
- 2 tablespoons of olive oil
- Ground black pepperto your taste
Instructions:
- Preheat your oven to 220C (425F).
- Wash and scrub the carrotsthen peel them with a potato peeler. Slice the carrots into disks of an even thickness - any size is okayjust be sure they’re not too thick.
- Spread the carrots out into an even layer on a large baking sheet.
- In a small bowlmix together the harissa paste and olive oilthen pour over the carrots.
- Season with ground black pepper and make sure the carrots are evenly coated with the harissa and olive oil.
- Roast the carrots in the oven for 20 to 25 minutesstirring once or twice during cooking.
