Ingredients
- 1 cup besan (chickpea flour)
- 1 cup yogurt
- 1/2 tsp turmeric powder
- 1/2 tsp ginger paste
- 1/2 tsp green chili paste
- 1/2 tsp asafoetida (hing)
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- Fresh coriander leaves for garnish
Directions
- In a mixing bowl, combine besan, yogurt, turmeric powder, ginger paste, green chili paste, and asafoetida. Mix well to form a smooth batter.
- In a non-stick pan, heat oil on medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Pour the besan-yogurt mixture into the pan and continuously stir until it thickens. This should take about 10-15 minutes.
- Once the mixture thickens and starts leaving the sides of the pan, turn off the heat.
- Quickly spread the mixture on a clean surface like a cutting board. Use a spatula to spread it into a thin layer.
- Let it cool for a few minutes, then cut it into strips.
- Carefully roll each strip to form a tight roll. Place them on a serving plate.
- Garnish with fresh coriander leaves.
