French Onion Soup

Ingredients
- 2 Medium-Sized Onions
- 2 tablespoons of unsalted butter
- 2 cloves of garlic, minced
- 1 tablespoon of all-purpose flour
- 30 ml of dry white wine
- 800 ml of vegetable broth
- Pinch of black pepper
- 60 ml of half and half
- 4 slices of French baguette
- 2 tablespoons of grated gruyere cheese
Directions

Preheat the oven to 180 degrees Celsius.

Peel then cut the onions into thin slices.

In a large pot, melt the butter over low-medium heat.

Add the onions to the pot and stir occasionally, until the onions become golden brown and translucent - about 10-15 minutes.

Add the garlic and continue stirring. Then mix in the all-purpose flour.

Once the mixture is combined, slowly pour in the white wine and stir until it evaporates.

Pour in the vegetable broth and stir again until combined. Reduce the heat to low and let it simmer for at least 30 minutes.

While the soup is cooking, prepare the French baguette slices. Place them on a baking tray lined with parchment paper and toast in the preheated oven for 10 minutes.

When the soup is done, season with black pepper and add the cream. Simmer for another 5 minutes.

Serve the soup in four individual bowls, with a slice of French baguette and a sprinkle of grated gruyere cheese on top.
