Rajma Masala

Ingredients
- ½ cup Rajma (red kidney beans), washed, soaked overnight, and drained
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon garam masala
- ¼ teaspoon turmeric
- 1 cup finely diced onions
- 2 cloves garlic, chopped
- 2-3 green chilies, chopped
- 1 teaspoon ginger, chopped
- 1 tomato, diced
- 2 tablespoons freshly chopped coriander leaves
- Salt, to taste
Directions
- Heat the oil in a saucepan over medium heat.
- Add the cumin, coriander, garam masala, and turmeric. Stir for a few seconds.
- Now add the onions and sauté until they turn golden.
- Add the garlic, green chilies, and ginger. Sauté for 1 minute.
- Now add the tomatoes and sauté for 4-5 minutes.
- Add the soaked Rajma and stir to combine everything.
- Add 1½ cups of water and stir.
- Bring to a boil and then reduce the heat to low. Cover and simmer for 20 minutes.
- Once the Rajma is cooked, add the freshly chopped coriander leaves and salt to taste.
- Serve hot with rice or roti.
