Ingredients
- 2 medium eggs
- 75g (2.6 oz) all-purpose flour, sifted
- 3 tablespoons cornstarch
- Pinch of salt
- 300ml (1 cup + 4 tablespoons) milk
- 2 vanilla beans, or 2 teaspoons of vanilla extract
- 50ml (3 1/2 tablespoons) vegetable oil, or melted butter if tolerated
- 3 tablespoons caster sugar
- 300ml (1 cup + 4 tablespoons) heavy cream
- 100g (3.5 oz) dark chocolate
Directions
- Preheat your oven to 170°C (335°F).
- In a medium bowl, whisk together the eggs, all-purpose flour, cornstarch, and a pinch of salt.
- In a separate, small saucepan, heat the milk over medium heat. Once the milk is hot, add in the seeds from the vanilla beans or the vanilla extract and whisk until combined.
- Slowly pour the hot milk into the egg and flour mixture while whisking constantly.
- Once combined, add the vegetable oil or melted butter and the caster sugar and whisk until fully combined.
- Grease an 8-inch square baking pan with butter, or line it with parchment paper. Pour the batter into the baking pan and spread it evenly.
- Bake in the oven at 170°C (335°F) for 25 minutes, or until the top of the cake is golden and a toothpick inserted into the center of the cake comes out clean.
- Let cool completely.
- In a medium bowl, whisk together the heavy cream and the dark chocolate until combined. Spread the custard over the cooled cake.
- Slice the cooled and filled cake in half horizontally and fill with the remaining half of the custard.
- Cut into 4-inch squares and serve.
