- 200 g potatoes, peeled and cubed
- 1 onion, diced
- 500 ml vegetable stock
- 2 tbs butter
- 200 g cheddar cheese
- 2 tbs plain flour
- 2 tbs cream
- 1 bay leaf
- 1 tsp black pepper
- 2 tbs chopped parsley

Reduce the heat to low and simmer for 30 minutes, or until the potatoes are soft.

Remove the bay leaf and blend the soup using a hand blender until smooth.

Add the cheese, plain flour, and cream, stirring to combine.

Increase the heat and simmer for an additional 10 minutes, stirring constantly, or until the cheese is melted and the soup is thickened.
