Ingredients
- 250 grams (1 cup) of vegetable oil
- 250 grams (1 cup) of honey or maple syrup
- 3 eggs
- 200 grams (1½ cup) of grated carrots
- 100 grams (1 cup) of all-purpose flour
- a pinch of nutmeg, cinnamon and ginger
- a pinch of baking powder and baking soda
Directions

Preheat oven to 180°C (356°F).

In a large bowl, combine the honey or maple syrup and the vegetable oil and whisk until it is well combined.

Add the eggs one by one, and whisk until the mixture is light and fluffy.

Stir in grated carrots.

In a separate bowl, combine the flour, nutmeg, cinnamon, ginger, baking powder and baking soda.

Add the dry ingredients to the wet ingredients and mix until the ingredients are just blended together.

Grease and/or line a 12 cm cake tin with parchment paper.

Pour the cake batter into the cake tin and place it in the oven.

Bake in the oven for 25-30 minutes, or until a toothpick inserted in the center of the cake comes out clean.

Allow the cake to cool for 10 minutes before serving.
