Ingredients
- 3 cups (360 g) all-purpose flour, plus extra for dusting
- 1 tablespoon (12 g) baking powder
- ½ teaspoon (3 g) baking soda
- 2 tablespoons (25 g) light brown sugar
- 2 teaspoons (10 g) ground cinnamon
- 2 tablespoons (37 g) softened butter
- 2 tablespoons (25 g) organic cornstarch
- 1 cup (240 ml) lukewarm milk
- 2 tablespoons (30 g) non-dairy spread
- ½ cup (60 g) sultanas
- ¼ cup (30 g) chopped pecan nuts
- 2 tablespoons (20 g) raisins
Directions

Preheat the oven to 375°F (190°C). Grease a 9x13-inch (23x33 cm) pan with butter or non-dairy spread and dust lightly with flour.

In a large bowl, combine the flour, baking powder, baking soda, brown sugar, and cinnamon. Mix until fully combined.

In a separate bowl, cream together the butter and cornstarch until light and fluffy.

Slowly stir in the milk and mix until completely combined.

Add the wet ingredients to the dry ingredients and mix until a soft dough forms.

Turn the dough onto a lightly-floured surface and knead for a few minutes until it is smooth and pliable.

Roll out the dough into a large rectangle, about 12x18 inches (30x45 cm).

Spread the non-dairy spread over the dough, leaving a ½-inch (1 cm) border.

Sprinkle the sultanas, pecans, and raisins over the top of the spread.

Roll up the dough along the long side, jelly-roll style.

Cut the rolled dough into 12 equal slices and place them in the greased pan.

Bake in the preheated oven for 25 minutes, or until golden-brown.

Allow to cool slightly before serving.
