This Chorizo and Chickpea Flatbread recipe is a quick and easy way to get a delicious and nutritious family meal on the table in no time! It’s a great way for the whole family to enjoy a Mediterranean feast and is sure to put a smile on everyone’s face - even the pickiest of eaters!
Ingredients
- 300 grams of chickpeas
- 1 tablespoon of olive oil
- 200 grams of Chorizo, sliced
- 250 grams of self-raising flour
- 2 tablespoons of Greek yogurt
- Water (as needed)
- Thyme (optional)
Instructions
- Preheat your oven to 180°C.
- Start by preparing your chickpeas. Remove any shells, rinse them and put them into a bowl.
- Add 1 tablespoon of olive oil and mix well.
- Put your sliced chorizo into a bowl and mix it with the chickpeas.
- In a separate bowlmix the self-raising flour, Greek yogurt and enough water to form a soft dough.
- Sprinkle a bit of thyme (optional) over the chorizo and chickpea mixture and mix everything together.
- Roll out your dough on a floured surface about 1 cm thick, then cut it into five circular ‘pizzas’ and place them on a baking tray.
- Spoon the chorizo and chickpea mixture onto each of the flatbreads, spreading it evenly.
- Bake in the oven for 15-20 minutes until the flatbreads are golden brown.
