- 2 cups cooked or tinned black beans
- 1.5 cups brown or white rice
- 2 juicy tomatoes (diced)
- 1 red onion (diced)
- 1 cup frozen corn
- 2 tablespoons olive oil
- 4 whole wheat tortillas
- 1 cup pre-shredded lettuce
- 1/2 cup grated cheese
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
Directions
- Preheat your oven to 350 degrees F (175 degrees C).
- Place the diced chicken on a baking sheet lined with parchment paper and pour the olive oil over the chicken.
- Sprinkle with chili powder and cumin and use your hands to mix everything together.
