Ingredients
- 300g Beetscooked and cut into small cubes
- 100g Feta cheesecrumbled
- 2 tablespoons Extra virgin olive oil
- 1 tablespoon Lemon juice
- 2 tablespoons Fresh dillfinely chopped
- Freshly ground black pepperto taste
Instructions

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).

Wash and clean the beets. Cut off the ends and place in a baking dish. Roast for 20 minutesor until beets are tender.

Once the beets have cooledcut into small cubes.

In a medium bowlcombine beetsfeta cheeseextra virgin olive oillemon juiceand fresh dill.

Season with freshly ground black pepper and mix until everything is well combined.
