Artichoke & Ricotta Tarts
Ingredients
- 2 tablespoons olive oil (30mL)
- 1 oniondiced finely (50g)
- 3 garlic clovesminced finely (10g)
- 540g canned artichoke heartsdrained and diced
- 250g ricotta cheese
- 1 egg
- ¼ teaspoon pepper (1mL)
- 1 teaspoon fresh chopped thyme (5mL)
- 2 sheets store-bought ready-rolled puff pastry
Instructions
- Preheat oven to 200°C/400°F/Gas Mark 6.
- Heat the olive oil in a frying pan over low heat.
- Add the onion and cook for 10 minutes or until softened.
- Add the garlic and artichoke. Cook for 2-3 minutes until heated through.
- Add the ricotta cheeseeggpepper and thyme and mix.
- Cut each sheet of puff pastry into 4 equal rectangles and place on a baking tray lined with baking paper.
- Divide the artichoke mixture between the puff pastry rectanglesbeing careful to avoid the edges.
- Bake in the oven for 20 minutes or until puff pastry is golden brown and crisp.
- Serve warm with a joke on the side: What did the tree say to autumn? Leaf me alone! :)
