Zuppa di Pesce

General Information
Ingredients
- 500g 4 different types of fresh, firm white-flesh fish e.g. cod, haddock, monkfish, hake
- 2 tablespoons of olive oil
- 1 large onion, finely chopped
- 2 celery sticks, finely chopped
- 3 cloves garlic, finely chopped
- 1 large carrot, grated
- 2 tablespoons of tomato puree
- Pinch of dried mixed herbs
- 75ml dry white wine
- 500ml vegetable stock
- 400g tin of chopped tomatoes
- 200g cherry tomatoes, halved
- 1 bay leaf
- 1 teaspoon of parsley, finely chopped
Directions
- Preheat oven to 180°C
- Cut the fish into bite-sized chunks (Choking Hazard Alert! Cut pieces no bigger than the size of a finger-tip)
- In a large oven-proof casserole dish, heat the olive oil and add the onions, celery, garlic and carrot and sauté until softened (around 5 minutes).
- Add the tomato puree, herbs and white wine. Simmer for 2 minutes.
- Add the stock, tomatoes and bay leaf. Bring to the boil, stirring occasionally.
- Reduce the heat, cover and simmer for 10 minutes.
- Uncover, add the fish and cherry tomatoes. Simmer for a further 10 minutes.
- Sprinkle parsley over the top and bake in the preheated oven for a further 10 minutes, until the fish is cooked through and the top is golden brown. (You can also finish off the dish on the hob top if desired).
- Serve with some crusty bread and a smile!
