Ingredients
- 1 tablespoon (15 ml) of olive oil
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 2 medium-sized courgettes, chopped into small cubes
- 1/2 teaspoon (2.5 ml) of dried thyme
- 1/4 teaspoon (1.25 ml) of ground pepper
- 2 cups (500 ml) vegetable or chicken stock
- 1/2 cup (125 ml) of peas
- 2 tablespoons (30 ml) of double cream
- Salt, to taste
Directions
- Heat the olive oil in a large pot over medium-high heat.
- Add the chopped onion and garlic to the pot and cook until softened and lightly browned, about 5 minutes.

- Add the chopped courgette, thyme, pepper, and a pinch of salt to the pot and stir to mix. Cook for a few minutes, stirring often to ensure nothing is sticking to the bottom.
- Pour in the vegetable or chicken stock and bring the mixture to a boil. Reduce heat and simmer for about 10 minutes or until the vegetables are tender.
- Add the peas to the pot and cook for an additional 5 minutes.
- Remove the pot from the heat and, using a hand blender, blend the mixture until it is smooth and creamy.
- Stir in the cream until everything is combined and season with salt as desired.
